Sausage Vegetable Soup
Nothing could be simpler and more inviting on a cold day than a steaming pot of this delicious soup. I often use turkey sausage, but use your favorite. (Bob Evans recipe)
 
 
 
1 (1 lb.) package smoked sausage
3/4 cup sliced celery
1/3 cup chopped onion
4 cups chicken broth
1-1/2 cup shredded cabbage
1 cup cubed potato
1 cup sliced carrots
1/2 teaspoon leaf thyme
1 cup frozen cut green beans
 
 
Brown sausage in a large pot; set aside. In drippings, cook celery and onions until tender. Add remaining ingredients except beans. Bring to a boil; reduce heat. Simmer, covered, 15 minutes. Add beans. Recover and simmer 15 minutes longer or until vegetables are tender.
