ALDIS noodles make this a super dish, but any brand is fine. I just found the authentic German noodles in recent years. They have STRUDEL too!! Frozen, but lucious when baked.
 
  
4 lbs. beef shoulder roast
salt & pepper to taste
1 very large onion, chopped
1-1/2 cups cider vinegar (not white!)
same amount of water
2 generous tablespoons of pickling spices (loosely inserted into gauze or, more practically, into the toe of a nylon stocking tied with a rubber band.)
Flour, browned, about a cup
 
Remove most of the suet from the meat and cut meat into big chunks. Fry meat in a small amount of shortening or suet, seasoning with salt and pepper, until brown on all sides. I use two pans to fry meat.
 
Put cooked meat into a deep pot. Add chopped onions, water and vinegar. Then, place the spice bag right into the center of the pot. On a medium to low flame, cook until all ingredients are blended, one to two hours. Occasionally press spice bag into every portion of the meat mixture to spread the flavor. When the mixture is ready, to your satisfaction, squeeze spice bag and remove.
 
Brown flour in a separate small skillet until very brown, stirring constantly. Then take meat out of the pan. There should be liquid left. Add browned flour, 1/2 cup or so, and stir for the gravy. Add more water as needed and cook, stirring to thicken gravy. Put meat back in and simmer a little bit more.
 
Serve over cooked wide noodles (authentic German noodles, if you can get them). In addition, serve mashed potatoes and a vegetable. Peas are good. For dessert - ALDIS STRUDEL.

BONUS RECIPE!
 
Granny's Pumpkin Pie
 
4 eggs, slightly beaten
2 Tablespoons pumpkin pie spice
1 can (no. 2-1/2) pumpkin
2 Tablespoons Bourbon Whiskey
1-1/2 cups sugar
1 large can evaporated milk
1 teaspoon salt
2 unbaked pie shells, 9-inch
 
Mix ingredients in order given. Pour into pie shells. Bake in 425 degree oven for 15 minutes. Reduce heat to 350 degrees and bake 45 minutes longer, or until knife inserted in center comes out clean.
 
Rose says, "Don't tell your company there's booze in the pie! Alcohol probably baked out, though!!"
